How to Make Pumpkin Cream Cheesecake Bread and Muffins

Ingredients:

  • One can of pumpkin puree
  • ½ cup of vegetable oil
  • 2/3 cup of milk
  • ½ cup of applesauce
  • 2 cups of sugar
  • 3 ½ cups of flour
  • Two tsp of vanilla extract
  • Two tsp of baking soda
  • Three tsp of cinnamon
  • Two tsp of nutmeg
  • ½ tsp of ginger powder
  • One tsp of cloves
  • 1 ½ tsp of salt
  • 1 ½ cup of mini chocolate chips

For cream cheese filling

  • 16 oz of cream cheese
  • 1 egg
  • 1 tbsp of milk
  • ¼ cup of sugar

Directions:

1Preheat the oven to 350 degrees Fahrenheit. Take the loaf pans and muffins pan with muffins liner. You can choose one or use both. This recipe is made up 12 muffins and one large loaf. Set aside. Prepare the large bowl and combine pumpkin puree, vegetable oil, eggs, milk, applesauce, sugar and vanilla extract. Ensure all ingredients are mixing well.

2In another bowl, mix the cinnamon, baking soda, flour, cloves, nutmeg, salt, and ginger. Combine them well. Then, combine the pumpkin mixture and the flour mixture. Stir manually using a spatula to combine. Add the chocolate chips and stir more evenly.

3To make the filling, in a small bowl add the cream cheese, egg, milk, and sugar. Beat them until getting the smooth texture. Set aside. To make the loaf bread, pour the batter into loaf pan until ¼ full. Then, spread the cream cheese over the top of it. Add the batter more ¾ full. Bake for about 60-80 minutes.

4For the muffins, use the remaining batter, take using the spoon and filling until ¾ full on each muffins liners. Bake for about 15-20 minutes. Remove and place on a plate. Let them cool for about 10 minutes before enjoying. Sprinkle the chocolate chips if you desired.
