Ingredients:

  • 2 ½ pounds of ground beef, sliced
  • 3 cups of yellow onion, chopped
  • 3 cups of poblano peppers, chopped
  • 3 tbsp of chili powder
  • 3 tbsp of garlic, minced
  • 1 tbsp of ground cumin
  • 1 tbsp of chipotle chile powder
  • two bottles of Mexican lager (for about 12 oz)
  • 2 ½ tbsp of all-purpose flour
  • 4 cups of unsalted beef stock, sliced
  • ½ cup of fresh oregano
  • Two cans of plum tomatoes. peeled, drained, and crushed (for about 28 oz)
  • ¾ tsp of salt
  • one ripe avocado, diced
  • 2 tbsp of red Fresno chile, sliced (optional)
  • Cilantro spring

Directions:

1Heat the oven over high heat and spray with cooking spray. Put the large medium skillet, add 1 ½ pounds of beef to the skillet. Cook for about 4 minutes until the beef browned. Don’t forget stirring continuously to get the crumbled beef. Remove and place in a bowl. Set aside. Do this action for one ¼ pound remaining beef.

2Use the same skillet, cook the onion, garlic, and poblano pepper for about 5 minutes. Stir occasionally. Add the cooked beef that readies before and stirs for a moment. Add the chipotle chili powder, ground cumin, and chili powder. Stir again for about 1 minute.

3Pour the crushed tomatoes and beer, stir quickly to loosen the browned bits for about 2 minutes. Then, add 3 ½ cups of beef stock to skillet and allow them boiled.
